Ingredients
  

  • 120 g grouse cheese grated or shaved
  • cups all-purpose flour
  • ½ cup warm water
  • 2 tablespoons olive oil
  • 1 teaspoon dry yeast
  • ½ teaspoon sea salt
  • 1 tablespoon fresh thyme or rosemary chopped

Method
 

  1. Combine flour, yeast, and salt in a bowl.
  2. Add warm water and olive oil gradually and mix until a soft dough forms.
  3. Knead the dough lightly for about five minutes until smooth.
  4. Cover and let the dough rest for thirty minutes in a warm place.
  5. Roll the dough thin and place it on a lined baking tray.
  6. Sprinkle grouse cheese evenly over the dough and add fresh herbs.
  7. Bake in a preheated oven at 200°C (390°F) for 12–15 minutes until golden.
  8. Remove from the oven, cool slightly, slice, and serve warm.

  • Bring grouse cheese to room temperature before using.
  • Avoid strong spices to preserve the cheese’s natural taste.
  • Best enjoyed fresh for optimal aroma and texture.
